St Patrick’s Day is almost here! On March 10, 2010, Chef Sean “Marched” into the KOMA studios with a meal straight from Ireland! Sean combined 3 lbs of cabbage, 1 small onion, ½ tsp of pepper and enough chicken stock to cover the cabbage in a large pot. He then added 1 cup or more of mouth watering chopped ham and boiled it all until the cabbage turned soft.
He also brought Colcannon, a traditional potato dish. Sean mixed 2 cups of cooked mashed potatoes (instant or homemade), 2 cups of chopped cabbage, 1-2 cups of chopped bacon or ham and 3 tbs of sour cream. He added chicken broth to make the Colcannon creamier. Top the meal off with a St. Patrick's Day cake from the Great Grains bakery. Bring some green home tonight from BUY FOR LE$$.
